Ils sont r\u00e9alis\u00e9s sur la base des recommandations du GEMRCN (Groupe d'Etude des March\u00e9s en Restauration Collective et de Nutrition) et des actions mises en place en faveur de la diminution du gaspillage alimentaire. <br \/><br \/>Le chef prend \u00e9galement en consid\u00e9ration les fr\u00e9quences recommand\u00e9es par le PNNS (Programme National Nutrition Sant\u00e9 Professionnels) et les demandes des villes. <br \/><br \/>Il faut compter jusqu'\u00e0 trois mois pour le processus de cr\u00e9ation des repas\t\t\t\t\t\t<\/span>\n\t\t\t\t\t<\/h3>\n\t\t\t\t\n\t\t\t\t\t\t\t\t\t<p class=\"elementor-icon-box-description\">\n\t\t\t\t\t\tLe SIREC fabrique environ 5700 repas et les distribuent \u00e0 65 points de livraison.<br \/><br \/>Ces repas sont destin\u00e9s aux enfants, aux seniors, au portage \u00e0 domicile et au personnel municipal. <br \/><br \/>Le SIREC propose depuis 2020 un menu v\u00e9g\u00e9tarien une fois par semaine et propose environ trois fois par semaine un menu sans viandes aux \u00e9coles. <br \/><br \/>Un  menu alternatif est propos\u00e9 en substitution des repas du SIREC se tournent vers le GEMRCN qui recommande d\u2019\u00e9laborer des plans menus sur 20 repas successifs. <br \/><br \/>Le Sirec s'appuie sur  : <br \/>Un tableau des fr\u00e9quences d\u2019apparitions des aliments dans les menus, <br \/>Un tableau des grammages recommand\u00e9s en fonction des populations class=\"font_8\">Am\u00e9liorer la qualit\u00e9 nutritionnelle des repas servis en collectivit\u00e9 compte tenu de :<\/p><ul class=\"font_8\"><li><p class=\"font_8\">La mont\u00e9e inqui\u00e9tante pour l\u2019Alimentation)<\/p><\/li><\/ul><p class=\"font_8\"><strong>Principes<\/strong> :<\/p><p class=\"font_8\">Accompagner les acteurs de la restauration collective dans les choix nutritionnels qu\u2019ils font, selon le type de convives et d\u2019\u00e9tablissements, en passant par :<\/p><ul class=\"font_8\"><li><p class=\"font_8\">Un\u00a0contr\u00f4le des\u00a0<a href=\"http:\/\/www.gemrcn.fr\/frequences\" target=\"_blank\" rel=\"nofollow noopener\" data-content=\"http:\/\/www.gemrcn.fr\/frequences\" data-type=\"external\">fr\u00e9quences<\/a>\u00a0de service class=\"font_8\">Des\u00a0recommandations sp\u00e9cifiques\u00a0relatives aux services de sel, pain, eau, sauces.<\/p><\/li><\/ul><p class=\"font_8\"><strong>Public concern\u00e9 :<\/strong><\/p><p class=\"font_8\">Toute la restauration collective \u00e0 caract\u00e8re sociale quel que soit l\u2019\u00e2ge et le sexe, quelle que soit la structure publique ou priv\u00e9e de restauration, qu\u2019elle soit professionnelle, \u00e9ducative, carc\u00e9rale, militaire, de vacances, de soins, quel que soit le mode de gestion, r\u00e9gie ou externalisation.<\/p><p class=\"font_8\"><strong>Objectifs nutritionnels g\u00e9n\u00e9raux :<\/strong><\/p><ul class=\"font_8\"><li><p class=\"font_8\">Augmenter la consommation de fruits, de l\u00e9gumes et de f\u00e9culents<\/p><\/li><li><p class=\"font_8\">Diminuer les apports lipidiques, et r\u00e9\u00e9quilibrer la consommation d\u2019acides gras ;<\/p><\/li><li><p class=\"font_8\">Diminuer la
